Veggie Spaghetti

Veggie Spaghetti

This is a deliciously rich tomato sauce, packed full with veggies. Serve with whatever pasta you like or just have it on it’s own.

INGREDIENTS

Olive oil

Garlic

Salt

Mixed italian herbs

1 can chopped tomatoes

2 teaspoons of Tomato puree

1 teaspoon miso

1 chopped onion

1 teaspoon smoked paprika

1 vegetable stock (only add water if the sauce looks a little dry)

Sunblush tomatoes (and a dash of the oil they are in)

Peppers

Mushrooms

Chopped carrots

Chopped butternut squash

Pasta of choice

METHOD

Add all the ingredients to a pan (except for the pasta), give it a good stir, pop the lid on and cook on a low heat until all the veggies are cooked. Once the veggies and sauce is ready, start to cook your pasta, serve with a handful of leaves for extra veggies – I used lambs lettuce.
