Veggie Bowl

This is quite similar to my Buddha Bowl (see recipe) but all the ingredients are cooked and I literally use whatever veggies I’ve got in the fridge! It’s perfect for when I get home late from teaching Yoga and want something that doesn’t take too long to cook but is full of goodness.

INGREDIENTS

Kale

Onions

Peppers

Broccoli

Mushrooms

Edamame beans

Purple cabbage

(Any veggies that you would like to add in!)

Garlic

Tofu (optional)

Chopped onions

1 teaspoon Miso paste

Smoked paprika

Cayenne pepper

Hemp seeds

Pumpkin seeds

Spinach

METHOD

Add everything to the pan except for the seeds and spinach – cook for a few minutes until the veggies are slightly soft, or cook for longer if you prefer them softer! Serve with spinach and add the seeds on top.
