This recipe came from wanting some pudding after a Sunday dinner but not having anything in…or so I thought! I went through my cupboards + freezer, and voila! Tropical crumble!
Fresh/Frozen fruit (I used mango, pineapple + strawberries)
Granola (I use Deliciously Ella’s)
Yoghurt (I use coconut yoghurt)
Put the fruit in a dish and put in the oven to soften. Mix the oats, coconut oil (melted) + maple syrup + place on top of fruit – bake for about 10 minutes (depending on how crunchy you like it!). Dish it up with some yoghurt + a sprinkling of granola for extra crunch.
