A great way to start your day full of veggies – feeling full of plant power!

INGREDIENTS

Squash

Mushrooms

Tomatoes

Avocado

Seeds

Bread

Spinach

Lemon

Sea salt

Olive oil

METHOD

Heat a pan with the olive oil, lemon juice, salt + garlic. Add the spinach, mushrooms, tomatoes + squash. Simmer for 10 minutes with the lid on. Cut up the avocado + mash on the toast. Serve altogether with a sprinkling of seeds!
