Lentil + Squash Dahl

A lovely winter warmer! It hits the tastes buds with the flavours from the curry and different textures and tastes from the avocado and yoghurt.

INGREDIENTS

2 cups of dry lentils

Garlic

Salt

1 teaspoon olive oil

1 can coconut milk

1 can chopped tomatoes

Butter nut squash

1 teaspoon miso

1 onion

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon coriander

1 teaspoon chilli powder

METHOD

Add all the ingredients to a pan and simmer for 40 minutes (keep an eye on it as it might need some water adding to it if it dries out!) Whilst it is cooking, cook some wholegrain rice. Serve with avocado slices, yoghurt and a sprinkle of chilli flakes. Should make about 4 servings.
